For those of you who have been enjoying our summertime recipes, you might be wondering when the next dessert recipe is going to appear. Our first recipe, if you remember, was for strawberry and cream cheesecake jars (which were delicious by the way!). Since then we’ve had barbecue salmon, mustard flavored burgers, Mexican salads – all of which have been fantastic (have you tried any?). But now the wait is over… because for our recipe this week we’ve chosen a dark chocolate and caramelized banana pie for all you dessert-loving, chocolate-adoring people out there.
It’s the perfect end to a dinner with family or friends as it serves up to six people. But if you’ve got more hungry mouths to feed, you can always double up the ingredients to make two delicious pies! The more the better we say when it comes to chocolate!
Here’s what you’ll need:
For the crust…
1/4 cup plus 1/2 teaspoon cocoa butter, melted
1 cup sweetened shredded coconut
1/4 cup almonds, pulverized
1/4 teaspoon pure vanilla extract
1/4 teaspoon sea salt
For the filling…
1 cup finely chopped dark chocolate
1 cup silken tofu
2 tablespoons soy milk
1 tablespoon maple syrup
For the topping…
3 bananas, sliced into 1/4-inch discs
1 cup raw sugar
Here’s what you’ll need to do:
To make the crust…
1. Preheat the oven to 300 degrees F. and grease a 9-inch pie pan with 1/2 teaspoon cocoa butter.
2. In a big bowl, mix together the coconut, almonds, remaining 1/4 cup cocoa butter, vanilla extract and salt until crumbly.
3. Mold the crust mixture into the pan, pushing up along the sides.
4. Bake until the coconut is lightly browned, 20 to 25 minutes then remove from the oven and let cool.
To make the filling:
5. Heat a double boiler over medium heat and melt the chocolate, stirring until creamy.
6. Remove from the heat and let cool for 10 minutes.
7. In a big bowl add the tofu, soy milk, maple syrup and cooled melted chocolate and blend with a hand mixer until completely smooth, about 10 minutes.
8. Pour the chocolate filling into the pie crust and chill for 2 hours.
To make the topping:
9. Preheat the oven to 250 degrees F.
10. Coat the sliced bananas in sugar and place on a baking sheet covered with parchment paper, in an even layer.
11. Bake until crisp and caramelized, 15 to 20 minutes, then let cool.
To assemble:
12. Top the pie with a layer of caramelized bananas, starting from the middle and working outwards in a circle. Chill for 30 minutes.
